Quick and Easy Bolognese

This is a super easy and delicious bolognese recipe that I made a couple of weeks ago. My bolognese is never the same because I don’t use measures and never add the same spices and herbs but this one was such a good turnout I wanted to share it. For two very hungry adults, you’ll need: 

  • 500g beef mince
  • 1 tablespoon of olive oil
  • 4 shallots roughly sliced
  • 4 garlic cloves minced or finely grated
  • 8 chestnut mushrooms roughly chopped
  • 8 white mushrooms roughly chopped
  • 1 tin of chopped tomatoes
  • 4-6 tablespoons of brown sauce
  • 1 beef stock cube(dry)
  • 1 tea spoon of paprika
  • 2 tablespoons of mixed herbs
  • 1 teaspoon of Peri Peri spice
  • 2 teaspoons of hot sauce( I used Wahaca sauce)
  • 150-200g of pasta of your choice(this time I used fresh tagliatelle)
  • Grated parmesan or any cheese of your choice(optional and amount is very negotiable)IMG_9678
  1. Boil a kettle of water for your pasta. Heat up some olive oil in a pan
  2. Add mince to the pan and fry it off on high heat, once it’s half way there and juices are running, crumble the beef stock over the mince. It adds thickness to the sauce at the end and you don’t get runny juice sauce
  3. Add shallots and fry for a couple of minutes
  4. Add tinned tomatoes and all herbs and sauces
  5. Add mushrooms, stir well. Cover with a lid and leave to simmer on a medium heat
  6. Add your pasta to the boiling water, add some salt and cook as per instructions
  7. Drain the pasta, take the bolognese off the heat and serve
  8. Top of with cheese and enjoy

The longer you leave the sauce to simmer the better it tastes, but it always comes out hearty, indulgent and full of flavour. Bolognese has definitely become a comfort meal in our house and ingredients & herbs are always changing so if you don’t have something-improvise!
