Poached Eggs with Bacon and Harrissa Vegetables

For years and years I thought that greasy Domino’s is the key to my hangover cure. That’s until this year, where I tried cooking fresh breakfast on one of the mornings where I didn’t feel so fresh, a breakfast that didn’t consist of cheese, dough and a ton of oil. I do believe that you are what you eat and that if you nourish your body from the inside it will show on the outside and cure your hangover that tiny little bit.

So without further ado here is the recipe for one of my favourite breakfasts. You’ll need(this serves 2):

  • 4 eggs
  • 5-6 slices of bacon cut into strips
  • 2 very big handfuls of spinach(I always have balls of frozen spinach, cheap and cheerful)
  • 6 mushrooms roughly chopped
  • 1 pepper roughly chopped
  • 1/2 onion diced
  • 2-3 fresh tomatoes or 1/2 tin of chopped tomatoes
  • 1.5-2 tablespoons of Harissa paste
  • 1 tablespoon of olive oil/coconut oil/vegetable oil
  • Pepper
  • Cling film

Start by preparing your eggs, I absolutely love poached eggs and my favourite part of eating poached eggs is popping the whites and watch yolk run out mmm… #yolkporn So thanks to Tesco, I now know a quick and easy way of making poached eggs! Start by boiling a pan of water, then you’ll need a square piece of cling film for each of your eggs. Use a ramekin or a mug to layout cling film, then pop a drop of oil into cling film and some pepper, crack the egg, tie up the ends of cling film so that it looks like a little parcel, repeat the process with all of your eggs.

Once you are done, heat up a pan with a spoonful of oil, chop up your meat(bacon, chicken whatever your fancy) and fry off till cooked. Now it’s time to pop your eggs in the boiling water, carefully lower your parcel into the pan and hit the timer button on your phone or a kitchen timer. I’ve worked out that 3.5 minutes gives you perfect consistency for a poached eggs-solid white, runny yolks. Now, put all your vegetables in the pan with your meat and fry on high heat add Harissa paste and voila, it’s ready.

Once the time is up, dip out your eggs and pop them on a towel and let the hot water run off. Lay your meat and veggies on the plate on top it off with your perfectly poached eggs(just unwrap the cling film and slide them out).

Feel free top off with some fresh herbs or spring onion. And if you are someone who can’t do a breakfast without carbs then toast couple of slices of bread(sourdough is my favourite) and use them as a base and to soak up the yolk. Flavours and textures are fantastic in this dish, if you like it a bit more spicy then add a bit extra Harissa paste.


If you are not a fan of some of these vegetables, just replace them with your favourites anything green or colourful is good for you!
