BBQ Meat Loaf

Weekend is the perfect time to try and cook a new dish so this weekend Pete decided to have a go at making a meat loaf. Admittedly, I’ve never had a meat loaf before and Pete has never cooked one before so I was pretty excited. I’ve had nothing to compare it to but I promise it was delicious! Moist and full of flavour, BBQ sauce created nice crusty bite on top and it will be definitely a staple dish for colder winter months. So to re-create this delicious comfort dish you will need(serves 3-4):

  • 500g beef mince
  • Half an onion
  • 1 tsbp horseradish
  • 1 tsbp mustard powder
  • Dash of garlic salt
  • Dash of salt
  • Dash of pepper
  • 2 tbsp Worcester sauce
  • 50g Bread crumbs
  • 1 egg
  • 225g A&W BBQ sauce (or any BBQ sauce)
  • Bread tin
  1. Start by warming up the oven at 180C(fan oven)
  2. Finely chop the onion
  3. In a large bowl thoroughly mix together everything but the BBQ sauce
  4. Lay the mince mixture into bread tin and cover with BBQ sauce
  5. Put in the preheated oven for 45 minutes
  6. Once it’s done, give it a couple of minutes to cool down unless you have asbestos hands like me. Cut and serve

We had ours with potato mash and cauliflower cheese, so it was an ultimate comfort dish. BBQ sauce gave it nice flavour and in the future Pete said he would add more spice for it. I’ve had nothing to compare it to but I absolutely loved it!

Bonus: you can use leftovers in your sandwiches, Pete had some in a salt & pepper roll with a bit of Frank’s Buffalo sauce.
